zucchini hummus veggie wrap

Serves 4

[.feature]4[.feature] original egglife® wraps

[.feature]1-2[.feature] carrots, cut into matchsticks

[.feature]1[.feature] large bell pepper, cut into matchsticks

[.feature]1-2[.feature] cucumbers, cut into matchsticks

alfalfa sprouts washed well

baby spinach

Zucchini Hummus

[.feature]1 ½[.feature] cups chopped raw zucchini

[.feature]1[.feature] small clove garlic

[.feature]2[.feature] tsp. tahini (sesame seed butter)

[.feature]2[.feature] tbsp lemon juice

[.feature]2[.feature] tbsp olive oil

[.feature]½[.feature] tsp sea salt

Steps

STEP 1

To make hummus, put all ingredients in a food processor fitted with the “S” blade.  Process until smooth and creamy, pausing to scrape down sides with a spatula as necessary.

STEP 2

To make wrap, line half of an egglife wrap with the hummus.  Top with veggies. Roll and enjoy!
