tomato avocado caprese wrap

4 roasted garlic & herb egglife® wraps

1 cup arugula

1 ball fresh mozzarella cheese (“ovoline” sized), sliced

1 plum tomato, sliced

1 avocado, sliced

4 tbsp basil, chiffonade (sliced into thin ribbons)

1 tsp balsamic vinegar

1 tsp olive oil

sea salt and fresh ground pepper

Steps

STEP 1

Line an egglife wrap with ¼ cup of the arugula.

STEP 2

Then layer mozzarella slices, tomato slices, avocado slices, and basil.

STEP 3

Drizzle balsamic vinegar and olive oil and add a pinch of salt and some fresh ground pepper.

STEP 4

Roll and serve.
