salmon salad with lemon capers and dill

[.feature]4[.feature] original or italian egglife® wraps

[.feature]6[.feature] oz can salmon, bones and skin removed

[.feature]2[.feature] tbsp mayonnaise

[.feature]2[.feature] tbsp fresh lemon juice

[.feature]1[.feature] tbsp chopped capers

[.feature]1[.feature] tbsp fresh dill, minced

fresh ground pepper

[.feature]1[.feature] cup arugula

tomato slices

Steps

STEP 1

Break up canned salmon into large flakes and place into a small mixing bowl.  Add mayo, lemon juice, capers and dill and mix well.  Add a few grinds of fresh pepper.

Can be made ahead and stored in refrigerator.

STEP 2

Line an egglife wrap with arugula, top with salmon salad and fresh tomato and roll up.
