Ingredients

1 egglife sundried tomato POWER PASTA 

⅓ cup water

1 tbsp butter

1 tbsp olive oil

1 carrot, cut into matchsticks

1 medium zucchini, cut into slices

1 medium yellow squash, cut into slices

6 tbsp unsalted butter

¾ cup Parmesan cheese, grated 

½ cup whole milk

½ cup cherry tomatoes, halved

Steps

STEP 1

Heat 1 tbsp olive oil in a skillet on medium-heat and add carrots, zucchini and yellow squash.  Saute for about 5 minutes, until softened. Remove from pan.

STEP 2

In the same skillet, melt the butter. Whisk in the Parmesan and milk until smooth. Stir in the cherry tomatoes and veggies. 

STEP 3

In a separate skillet over medium-heat, add water, butter and POWER PASTA. Cover and heat for 3 minutes, stirring occasionally.  

STEP 4

Add egglife POWER PASTA and veggies to the sauce mixture and stir until coated. 

STEP 5

Top with fresh basil and enjoy!
