2 packs original egglife® wraps 

16 oz mascarpone cheese

1 cup heavy cream

½ cup powdered sugar substitute

2 tsp vanilla extract 

natural food coloring 

Steps

STEP 1

Whip together mascarpone, heavy cream, powdered sugar and vanilla for about 5 minutes. Divide into 7 equal parts.

STEP 2

Add 1 drop of food coloring to each part of the cream mixture (2 bowls of red, 1 orange, 1 yellow, 1 green, 1 blue and 1 purple). Mix and add more food coloring until desired color is reached.

STEP 3

Lay 1 wrap on a plate or cake stand for the base. Spread half of the purple frosting on the wrap. Lay a second wrap on top. Spread the remaining purple frosting on this wrap.

STEP 4

Repeat Step 3 with remaining wraps and frosting colors, working your way up the colors of the rainbow. Each color will be two layers of filling.

STEP 5

Once complete, add the remaining red frosting on top. Chill for 30 minutes in the fridge before serving.
