FISH TACOS WITH WASABI AIOLI

Cod

4 – five ounce portions of cod, thawed under refrigeration and pat dry

1 tbsp lime juice (or juice of 1/2 a lime)

1-2 tbsp avocado oil

Salt to taste

Wasabi Aioli

3 tbsp mayonnaise

2 tsp lime juice

½ tsp prepared wasabi (adjust to your desired heat preference)

½ tsp extra virgin olive oil

¼ tsp salt (adjust according to taste)

Garnishes

1 package of southwest style egglife® egg white wraps

1 medium haas avocado, chopped

½ red cabbage shredded

¼ cup fresh cilantro, chopped

¼ cup fresh cilantro, chopped

Directions

STEP 1

Thaw cod and dry as able.

STEP 2

Add lime juice and salt and allow to marinate for 5-10 minutes

STEP 3

Prepare your aioli by adding the mayo, lime, wasabi and olive oil together. Taste, and add salt, or more wasabi according to preferences.

STEP 4

Once the fish has marinated, transfer to a frying pan. Turn the stove to medium, add avocado oil and cook the fish about 3-5 minutes on each side, or until opaque and flakey.

STEP 5

Meanwhile, chop the garnishes per directions above.

STEP 6

Once the fish is finished, pull off the heat, flake into pieces and assemble your tacos in the southwest style egglife® egg white wraps.

STEP 7

Enjoy!
