fish tacos with wasabi aioli

Ingredients

Cod

[.feature]4 – 5[.feature] ounce portions of cod, thawed under refrigeration and pat dry

[.feature]1[.feature] tbsp lime juice (or juice of 1/2 a lime)

[.feature]1-2[.feature] tbsp avocado oil

salt to taste

wasabi aioli

[.feature]3[.feature] tbsp mayonnaise

[.feature]2[.feature] tsp lime juice

[.feature]½[.feature] tsp prepared wasabi (adjust to your desired heat preference)

[.feature]½[.feature] tsp extra virgin olive oil

[.feature]¼[.feature] tsp salt (adjust according to taste)

garnishes

[.feature]1[.feature] package of southwest egglife® wraps

[.feature]1[.feature] medium avocado, chopped

[.feature]½[.feature] red cabbage shredded

[.feature]¼[.feature] cup fresh cilantro, chopped

Steps

STEP 1

Thaw cod and dry as able.

STEP 2

Add lime juice and salt and allow to marinate for 5-10 minutes

STEP 3

Prepare your aioli by adding the mayo, lime, wasabi and olive oil together. Taste, and add salt, or more wasabi according to preferences.

STEP 4

Once the fish has marinated, transfer to a frying pan. Turn the stove to medium, add avocado oil and cook the fish about 3-5 minutes on each side, or until opaque and flakey.

STEP 5

Meanwhile, chop the garnishes per directions above.

STEP 6

Once the fish is finished, pull off the heat, flake into pieces and assemble your tacos in the southwest egglife® wraps.
