4 egglife Italian style egg white wraps

Deli Turkey

Sliced Plum tomatoes

Fresh mixed greens

Fresh Twists: Basil, Mango, Vinegar & Oil, Pesto, Avocado, Sliced Almonds

Optional:  Homemade Pistachio Pesto

1 cup packed basil leaves

½ cup packed spinach leaves

¼ cup pistachios

1 tbsp lemon juice

2 tbsp olive oil

¼ tsp sea salt

Fresh ground pepper

Directions

To make the basic wrap, start with an egglife Italian-style wrap.  Top with fresh greens and sliced tomato.  For a fresh twist, add avocado, sliced almonds, pesto, or fresh basil.  To give it a California vibe – try adding mango!

If you want to do more – try this homemade pistachio pesto:

To make the pistachio pesto yourself:  Put all ingredients in a mini prep food processor and mix until smooth, but still a bit chunky.  You will need to scrape down the sides with a spatula a few times.
