Buffalo Chicken Salad

Here’s a Whole30-inspired version of that classic favorite that’s a snap to make!

Makes

4 Servings

  • 4 egglife Southwest egg white wraps
  • 1 cup chopped cooked chicken
  • ½ cup chopped celery (about 1 stalk)
  • ½ cup chopped carrot (about 1 carrot)
  • 2 tbsp Primal Kitchen brand mayonnaise
  • 1 tbsp hot sauce (such as Cholula or Frank’s Red Hot)
  • 4 lettuce leaves
  • Four egglife Italian style egg white wraps
  • 1 can tuna in oil, drained
  • ½ 14 oz. can artichokes, drained and chopped
  • 1 cup arugula
  • Cooking spray
  • Olive Tapenade*
    • 1 small clove of garlic
    • ¼ cup kalamata olives
    • 1 tsp. chopped sun-dried tomatoes in oil
    • 1 tsp capers
    • 1 tsp parsley
