6 Original or Southwest-style egglife® wraps
4 eggs
¼ lb lean sausage of your choice
1 tbsp butter
½ cup shredded kale
¼ cup red pepper, finely diced
½ cup cheddar cheese
Salt and pepper to taste
Cooking spray
Optional: hot sauce
egglife wraps are made with cage-free eggs, not flour.
6 Original or Southwest-style egglife® wraps
4 eggs
¼ lb lean sausage of your choice
1 tbsp butter
½ cup shredded kale
¼ cup red pepper, finely diced
½ cup cheddar cheese
Salt and pepper to taste
Cooking spray
Optional: hot sauce
Whisk eggs in a small bowl and set aside.
Heat a non-stick skillet over medium-high heat.
Add sausage and cook about 5 minutes or until cooked through.
Remove sausage and drain.
Add butter and sauté kale and peppers for 1 minute until kale is slightly wilted.
Add eggs to skillet and gently stir to scramble. When eggs are cooked, turn off heat and add cheese. Stir to incorporate eggs into mixture.
Add salt and pepper.
Add about 1/6th of the mixture to a wrap and roll.
Spray lightly with cooking spray and grill wrap in panini maker for 3-4 minutes or warm in non-stick skillet.
Serve with hot sauce if desired. Can be made one day ahead and heated in microwave.
NEW egglife wraps are made with eggs, not flour.
