Pepperoni Pizza Panini

A gluten free low carb pizza recipe even the kids will love. If you’re missing pizza, here’s a great gluten free pizza option!

4 Wraps

4 egglife Italian style egg white wraps

4 tsp. tomato paste

1 cup arugula

4 oz. fresh mozzarella, sliced (look for “Ovaline” size) or shredded mozzerella

1 oz. sliced pepperoni (~16 small rounds, or 4 per panino)

4 tsp fresh basil, chiffonade

Sliced plum tomatoes

Cooking spray


To assemble wrap, spread 1 teaspoon of tomato paste on lower half of each wrap.  Begin layering with arugula, 1 oz fresh mozzarella, 4 slices of pepperoni, a few tomato slices and the basil then roll the wrap. 

Spray outside of the wrap lightly with cooking spray.  Place in panini press, wrap side down, and warm it until cheese is melted.  Alternatively, heat in non-stick skillet until cheese is melted.
