Cheddar BLT Panini

This interesting take on the traditional BLT uses heart healthy avocado with mayo and lime juice for a zesty zing. Our wraps make the perfect low carb bread replacement for a treat your family will love.

Makes

4 Wraps

4 egglife Original egg white wraps

8 slices cooked bacon

4 lettuce leaves (leaf or Boston works best)

1 cup shredded cheddar cheese

Thinly sliced plum tomatoes

Cooking spray

 

Avocado Mayo

½ small avocado

1 tsp fresh lime juice

1 tbsp mayonnaise

Directions

First make the avocado mayo:  Mash avocado with lime juice.  Add in mayonnaise and mix until smooth.

To assemble wrap, spread ¼ of the avocado mayo on the lower half of each wrap.  Then top with lettuce, 2 slices of bacon, ¼ cup of shredded cheese and a few slices of tomato. 

Roll up wrap, spray outside of the wrap lightly with cooking spray.  Place in panini press, wrap side down, and warm it until cheese is melted.  Alternatively, heat in non-stick skillet until cheese is melted.
