Salmon Salad with Lemon, Capers and Dill

This salmon wrap is a delicious Paleo recipe and a great way to get your Omega 3s. So quick and easy to make it’s like gluten free fast food!

Makes

4 Servings

4 egglife Italian style or Original egg white wraps

1 6 oz. can of salmon, bones and skin removed

2 tbsp mayonnaise

2 tbsp fresh lemon juice

1 tbsp chopped capers

1 tbsp fresh dill, minced

Fresh ground pepper

1 cup arugula

tomato slices

Directions

Break up canned salmon into large flakes and place into a small mixing bowl.  Add mayo, lemon juice, capers and dill and mix well.  Add a few grinds of fresh pepper.

Can be made ahead and stored in refrigerator.

Line Italian style or Original wrap with arugula, top with salmon salad and fresh tomato and roll up.
