Makes

4 Wraps

4 Italian-style egglife® wraps

4 tsp tomato paste

1 cup arugula

4 oz fresh mozzarella, sliced (look for “Ovaline” size) or shredded mozzerella

1 oz sliced pepperoni (~16 small rounds, or 4 per panini)

Sliced plum tomatoes

4 tsp fresh basil, chiffonade

Cooking spray

Directions

Step 1

To assemble wrap, spread 1 teaspoon of tomato paste on lower half of each wrap.

Step 2

Begin layering with arugula, 1 oz fresh mozzarella, 4 slices of pepperoni, a few tomato slices and the basil. 

Step 3

Roll the wrap to prepare for the panini press.

Step 4

Spray the outside of the wrap lightly with cooking spray.

Step 5

Place in the panini press, wrap side down, and warm it until cheese is melted.  Alternatively, you can heat it in a non-stick skillet until the cheese is melted.
