Zucchini “Hummus” Veggie Wrap

Traditional hummus is a no-no on some legume-free diets, but this version uses zucchini instead of garbanzo beans. So eat to your heart’s content.

Makes

4 Servings

4 egglife Original egg white wraps

1-2 carrots, cut into matchsticks

1 large bell pepper, cut into matchsticks

1-2 cucumbers, cut into matchsticks

Alfalfa sprouts, washed well

Baby spinach

 

Zucchini Hummus

1 ½ cups chopped raw zucchini

1 small clove garlic

2 tsp. tahini (sesame seed butter)

2 tbsp lemon juice

2 tbsp olive oil

½ tsp sea salt

Directions

To make hummus, put all ingredients in a food processor fitted with the “S” blade.  Process until smooth and creamy, pausing to scrape down sides with a spatula as necessary.

To make wrap, line half of an egglife Original wrap with the hummus.  Top with spinach and veggies.

Roll and enjoy!
