4 Servings

4 egglife Italian style egg white wraps

1 ball fresh mozzarella cheese (“ovoline” sized), sliced

1 plum tomato, sliced

1 avocado, sliced

1 cup arugula

1 tsp balsamic vinegar

1 tsp olive oil

4 tbsp basil, chiffonade (sliced into thin ribbons)

Sea salt and fresh ground pepper

Directions

Line an egglife  Italian style wrap with ¼ cup of the arugula.  Then layer mozzarella slices, tomato slices, avocado slices, and basil.  Drizzle balsamic vinegar and olive oil and add a pinch of salt and some fresh ground pepper.  Roll and serve.
