Smoked Salmon on “Rye” with Lemon Caper Cream Cheese

Have a craving for cream cheese and lox, but have sworn off carb rich bagels? Here’s a Keto recipe that will satisfy that craving. Makes a great low carb breakfast or an easy Keto lunch.

4 Servings

4 egglife Rye style egg white wraps

2 oz. smoked salmon

3 tbsp whipped cream cheese

2 tbsp fresh lemon juice

1 tbsp chopped capers

½ cucumber, sliced into thin rounds

1 cup arugula

Fresh dill

Directions

First, make the lemon caper cream cheese.  Mix all ingredients together until smooth.  Can make several days ahead.

To assemble, place ¼ cup of arugula on half of the Rye style wrap.  Top with a half ounce of the smoked salmon, a thin layer of the cream cheese, cucumbers and fresh dill fronds.
