Roast Beef with Herbed Macadamia “Ricotta”

Makes

4 Servings

4 egglife Italian style egg white wraps

¼ lb compliant roast beef, such as Applegate Organics brand

Mixed greens

Sliced Roma tomatoes

 

Herbed Macadamia “Ricotta”

1 cup macadamia nuts, soaked for at least one hour

¼ water

2 tsp nutritional yeast

1 tsp lemon juice

¼ tsp salt

1 tsp chopped basil

1 tsp chopped chives

1 tsp chopped parsley

Directions

To make the “ricotta,” place all ingredients in a small food processor and process until finely chopped, scraping down sides as necessary.  The texture should be creamy but grainy, resembling real ricotta cheese.  Then add in the chopped herbs and pulse until combined.

To assemble the wrap, line one half of each wrap with ¼ of the macadamia “ricotta,” then top with greens, roast beef and tomato.

Roll up and enjoy!
