Scrambled Eggs with Lox on “Rye”

4 egglife Rye style egg white wraps

½ cup chopped red onion

2 tbsp olive oil

4 eggs

2 ounces gravlax or smoked salmon, chopped

¼ cup sour cream

2 tsp chopped fresh dill, plus additional for garnish if desired

Salt and pepper


Mix sour cream and dill together and set aside.

Heat a non-stick skillet over medium heat.  Add olive oil and onion.  Sauté onion until soft.  Whisk eggs and add to pan with onion.  Cook eggs to desired doneness and then add gravlax or smoked salmon.  Stir to combine.  Add salt and pepper to taste.

Wrap scrambled eggs into an egglife Rye style egg white wrap.  Top with dill sour cream and additional dill if desired.  Enjoy!
