Serves 3

3 Italian-style egglife® wraps

½ lb chicken tenders (can also use pre-cooked tenders)

2 tbsp olive oil

Sea salt

Pepper

½ tbsp Italian herbs

½ cup baby spinach

¼ cup sun-dried tomatoes in oil, sliced

Optional:  Balsamic glaze, (omit if you’re following a Keto diet)

Directions

To make chicken, heat oil in a non-stick pan on medium heat.  Generously salt and pepper tenders and sprinkle Italian herbs on top.  Cook tenders for about 5 minutes on each side or until cooked through.

To assemble the wrap, line each wrap with the spinach.  Top with 1-2 chicken tenders (depending on size), sun-dried tomato, and roll-up.

For additional flavor, if you’re not following a keto diet, top with balsamic glaze!
