Italian Tuscan Chicken Wraps

Nothing says Tuscany like sun dried tomatoes and Italian herbs. Just because you’re on a gluten-free diet who says your tortilla recipe has to taste boring.

Makes

3 Servings

3 egglife Italian style egg white wraps

½ lb chicken tenders *

2 tbsp olive oil

Sea salt

Pepper

½ tbsp Italian herbs

¼ cup sun dried tomatoes in oil, sliced

½ cup baby spinach

*can also use pre-cooked tender

Optional:  Balsamic glaze, (omit if you’re following a Keto diet)

Directions

Heat oil in a non-stick pan on medium heat.  Generously salt and pepper tenders and sprinkle Italian herbs on top.  Cook tenders for about 5 minutes on each side or until cooked through.

To assemble wrap, line each wrap with the spinach.  Top with 1-2 chicken tenders (depending on size), sun dried tomato, and roll up.

For additional flavor, if you’re not following a keto diet, top with balsamic glaze!
